Pinnacle – Alpine Style
Pinnacle is an Alpine-style cheese inspired by Comté and Gruyère. Its rich nuttiness provides the ‘oomph’ a dish sometimes needs to reach its full potential. While aging, Pinnacle becomes firm and dense, with nutty and sweet flavors, particularly notes of caramel and hazelnut. The longer it ages, the more nutty and complex the flavors become. Sweet and nutty Pinnacle is versatile and pairs well with many wines, including Chardonnay, Sauvignon Blanc, Syrah, or Zinfandel. For a beer pairing, try a witbier spiced with coriander or orange, or a Gueuze-style Lambic.
At 3 to 6 months, Pinnacle is creamy and mild. After 6 to 9 months the flavor increases in boldness. Aged for 12 months or more, the flavor blooms into that crystallized butter we so adore.

We’re proud to serve Southwestern Virginia (Galax, Hillsville, Independence, Roanoke and Wytheville, VA and surrounding towns). We also serve the North Carolina Piedmont Triad (Winston-Salem, Greensboro and High Point, NC) with fresh raw milk dairy products.
